Dried plums – a wonderful appetizer, plums can be served as a separate dish; they go well with pork and beef. There are several ways to dry plums. Can be cooked in the dryer, in the oven with the door ajar. Can also be cooked in a convection oven or in the shade outside. You can use any herbs and spices for plums, but smokedness gives a very interesting taste and aroma, so it is advisable to add smoked coriander or smoked paprika, or other smoked spice.

If the plums are dried in the dryer at a temperature of 65-70°C (150-160°F), it will take 5-7 hours. Perhaps more, it all depends on the juiciness of the plums and to what extent you want to dry them. In the oven, plums are dried at minimum degrees and with the door ajar. There is a third option - a convection oven. The temperature in it is stable - whatever you set it to. At 40-60°C (105-140°F) in a convection oven, plums can be cooked within 4-5 hours.
Cut the garlic into thin slices. Pour the olive oil into a saucepan, put it on the fire and, as soon as you hear the first crack, turn off the heat. Place the finished plums tightly in sterilized jars; the layers can be sprinkled with herbs and thinly chopped garlic. When plums fill the jars, sprinkle with garlic and pour in hot oil. Cover with a lid, turn upside down, cover with a towel and let cool.
