Scrambled eggs with tomatoes is an easy Turkish dish that goes well with breakfast or as a snack.

To cook a scrambled eggs with tomatoes recipe, remove the seeds from the pepper, cut into slices and lightly fry in oil. Make cuts on the tops of the tomatoes, pour boiling water over and hold for 1-2 minutes. Drain the water from the tomatoes, remove the peel, and then finely chop them.

Add chopped tomatoes to the pan to the pepper, and, stirring occasionally, simmer for 8-10 minutes. Do not allow the tomato juice to completely evaporate.

In a separate bowl beat eggs with salt and pepper. While stirring the tomatoes, pour in the beaten eggs and fry lightly. The eggs should be slightly moist but not dry. Serve hot scrambled eggs with tomatoes.
