Pilaf with tomatoes, pistachios and sesame is a Turkish recipe, light and at the same time hearty vegetable pilaf. Sesame can be replaced with sunflower seeds.

For the pilaf with tomatoes, pistachios and sesame seeds, scald the tomatoes with boiling water, remove the skin and cut into small cubes. Remove seeds and membranes from peppers and cut into small cubes. Sort the rice, rinse several times with cold water, add water and set aside for 30 minutes.
Pour vegetable broth into a deep saucepan, place over medium heat. When the broth warms up, pour in the rice, after draining the water, add the saffron and bring to a boil. When the broth boils, reduce the heat and simmer for 25 minutes covered.
Then add tomatoes, peppers and cardamom. Continue cooking for another 5-10 minutes until the rice is fully cooked and all the liquid has evaporated. Ready pilaf transfer to a dish, sprinkle with sesame seeds and lightly crushed pistachios and serve hot.
