Pickled eggplant - Jamie Oliver's recipe, this way you can pickle any vegetables, such as zucchini, carrots and others. Pickled eggplants are good as an appetizer or as an addition to the main course. Cool the eggplant in the refrigerator before serving - this way they will be tastier.

Boil jars and lids for preservation, put prepared eggplants with oil and spices into them, and roll up. Turn jars of marinated eggplant over and let cool before storing in pantry.
