In Armenian cuisine, shish kebab is cooked not only from lamb, pork, goat, but, oddly enough, from vegetables. No feast is complete without a vegetable shish kebab.

A very simple recipe and very healthy vegetable shish kebab in Armenian. Rinse vegetables and thread on a skewer. Bake on fire, turning occasionally.
When the skin of the vegetables is slightly charred, remove the kebab from the heat. vegetable shish kebab is served as a side dish for meat kebab.
