Colcannon - Irish mashed potatoes and cabbage with green onions, eggs and hard cheese. In place of Savoy cabbage, you can use young white cabbage.

For the colcannon recipe, finely chop the cabbage, transfer to a deep saucepan, cover with water and boil until soft. Peel potatoes, boil, and then mash. To the mashed potatoes, add 2 tablespoons of butter, warm cream and a pinch of nutmeg. Finely chop the onion and lightly fry in 2 tablespoons of butter. Combine mashed potatoes with boiled cabbage, fried onions, salt, pepper and mix well.
Lubricate the baking dish with the remaining butter, put the mixture into it, level it well and make 4 recesses. Place the mold in the oven preheated to 200°C (390°F) for 10 minutes. After the time has elapsed, colcannon take out, beat the eggs into the recesses without breaking the yolk, salt, pepper, sprinkle with grated cheese and put back in the oven for 10 minutes. Colcannon is served hot, in addition to it, you can serve a vegetable salad.
