Red fish with vegetables is a recipe of Armenian cuisine. In Armenia, they cook mainly from river trout (ishkhan), but it can be replaced with any other red fish. Of course, this is not ishkhan, as they would say in Armenia, but red fish cooked in this way is very juicy, tender and tasty.

For the red fish with vegetables recipe, gut the fish, cut off the fins, tail and head - this is then used to prepare the broth. Divide the carcass into portions. Boil water in a saucepan, salt, add 3-4 peppercorns, add bay leaf, one peeled onion, 50 g of carrots and cut off parts of the fish (tail, fins, head). When the water boils, reduce the heat to medium, put the cut portioned pieces of fish into the broth and simmer slightly (5 minutes).

In a roasting pan heated with oil, fry the carrots grated on a coarse grater and one finely chopped onion. When the vegetables are lightly browned and the onion is translucent, add the tomato paste and fry for another 5-7 minutes. In a separate pan, lightly fry the flour and, without ceasing to stir - it is better to do this with a whisk, add 0.5 l of strained fish broth.

When the sauce boils, pour it into vegetables, mix, add crushed garlic, salt, add 3-4 black peppercorns and let it boil. When the broth with vegetables boils, carefully transfer the fish into it, cover with a lid and bring to a boil over medium heat. When serving red fish with vegetables garnish with parsley or other herbs.
