Parsley Root Casserole – parsley root is a versatile product, it can be added as a seasoning to soups or when preparing main meat dishes. But you can also prepare a dish in which parsley root is used as the main ingredient. The casserole turns out very satisfying and at the same time light.

The recipe for parsley root casserole is very simple. Wash the parsley root well with a brush and clean it, but this is not necessary. Then cut it into a thickness of about 5 mm.

Peel the onion and cut it into thin half rings. Add butter and onion to a heated frying pan, fry the onion until soft. When the onion becomes soft and transparent, add chopped parsley root.

After 5 minutes, add broth, cream, salt and pepper. Simmer over low heat until boiling, stirring occasionally.

Transfer everything from the frying pan to an ovenproof dish, sprinkle with grated Parmesan and place in an oven preheated to 220°C (430°F). Cook zapekanka in the oven for 20-30 minutes, then serve immediately sprinkled with chopped parsley.
