Sicilian caponata - Gordon Ramsay's recipe, caponata is made with vegetables, olives and other Mediterranean ingredients. As for olives, it is best to buy them with pits. The pits are easily removed by light pressure on the olives. If there is no time, then of course, you can use pitted olives, but the recipe, which includes pitted olives, is much tastier.

Eggplants 1 pcs
Onion 1 pcs
Petiole Celery 2 stems
Hot Pepper 1 pcs
Tomatoes 5 pcs
Garlic 2 cloves
Sugar 2 tbsp
Balsamic Vinegar 1-1,5 tbsp
Olives 100 g
Capers 50 g
Pine Nuts 50 g
Olive Oil 5 tbsp
Basil 3-4 stems

Cooking Recipe

To cook the recipe of Gordon Ramsay's Sicilian caponata, heat the olive oil in a wide frying pan, add the diced eggplant, finely chopped onion, finely chopped celery and pepper to the pan. Mix everything, season and fry for 5 minutes.

Pour boiling water over the tomatoes, and after 1-2 minutes, cool under running cold water, remove the peel, squeeze out the seeds and juice. Cut the tomatoes into slices and add to the pan with the vegetables.

Next to the tomatoes, add chopped garlic, sugar, vinegar, chopped olives and washed capers to the pan with vegetables. Stir and simmer over high heat for 5-8 minutes, stirring occasionally, until eggplant is soft. When serving caponata sprinkle with basil leaves and roasted pine nuts.
