Aloo gobi bhaji - the national dish of India, vegetables are deep-fried, sprinkled with spices and poured with yogurt. Instead of yogurt, you can pour sour cream or sour milk.

For the aloo gobi bhaji recipe, peel the potatoes and cut into rounds about 6mm thick. Rinse the cauliflower, let the water drain, and then disassemble into inflorescences. Heat the oil in a frying pan and fry the potatoes and cabbage in turn. Remove the fried vegetables with a slotted spoon on a napkin, let the oil drain, and then transfer to a dish.
Lightly toast the cumin in a dry frying pan, transfer to a bowl and mix with pepper, turmeric and salt. Sprinkle the vegetables with the prepared spice mix, top with lightly whipped yoghurt and serve. Aloo gobi bhaji is best served hot and drizzled with yogurt just before serving.
