Vegetarian pulao - a recipe of Indian cuisine, vegetarian pilaf is very diverse and there are many cooking options, this is one of them. For this pilaf, you can take any long-grain rice, but Basmati rice is best.

Potatoes 1-2 pcs
String Beans 50-70 g
Cauliflower 100 g
Garlic 5 cloves
Ginger 1-2 cm
Vegetable Oil 3 tbsp
Cumin 1 tsp
Green Peas 2 tbsp
Coconut Milk 50 ml
Saffron 1 pinch
Cardamom 4 pcs
Clove 4 pcs
Cinnamon 1 pcs

Cooking Recipe

For the vegetarian pulao recipe, sort the rice, rinse well and cover with cold water. Peel potatoes, carrots and onions, wash and cut into small cubes. Grind garlic with ginger in a mortar.

Pour oil into a frying pan or brazier, heat, and then add cumin and heat for 1 minute. When the aroma of zira begins to appear, add the onion, mix and fry until slightly golden.

Add carrots, potatoes, beans and peas to the onion, mix and fry for 5 minutes. Then add crushed garlic with ginger, mix and simmer for another 2 minutes. Pour milk into the brazier, add saffron, mix, salt and add the rest of the spices.

Drain the water from the rice, put it on the vegetables, smooth it. Pour in enough water to just cover the rice. Reduce heat to low, cover and cook for 30 minutes without stirring. Mix ready-made crumbly rice with vegetables, put pulao on a prepared plate and serve.
