Pilaf with shirin-qovurma is a traditional Azerbaijani dish. Shirin-qovurma is a sweet roast made from meat, onions and dried fruits.

For the pilaf with shirin-qovurma recipe, it is necessary to rinse the rice 3-4 times under running water, preferably warm. In a cauldron or brazier, heat vegetable oil, add rice, and, stirring well, fry so that the oil envelops each rice. After adding the Imereti saffron, pour in water 1-1.5 cm above the rice, cover and cook the pilaf until tender, over medium heat.
To cook the shirin-qovurma fry, the meat must be cut into small pieces (about 50 g each). Chop the onion and fry in a pan with butter, add meat, salt, saffron and simmer over medium heat. After 15 minutes, add pre-soaked dried fruits, broth or water and simmer for another 15-20 minutes. After everything is ready, put pilaf on a flat plate, put shirin-govurma on top and decorate with dried fruits. Serve pilaf hot.
