Marquis potatoes - a French cuisine recipe, this potato is similar to the Duchess potatos, but with the addition of vegetables.

For the recipe Marquis potatoes, finely chop the onion, chop the tomatoes, scald with boiling water, remove the peel, and then chop finely. Peel potatoes and boil in salted water. When the potatoes are cooked, drain the water, dry the potatoes, wash, add two yolks, milk, butter and mix.
Heat olive oil in a frying pan, add chopped onion and fry until transparent. Then add the prepared tomatoes to the onion and, stirring occasionally, simmer the tomatoes and onions until the liquid has completely evaporated.
Transfer the mashed potatoes to a pastry bag or syringe with a carved nozzle. Line a baking sheet with baking paper and pipe the mashed potatoes onto the baking sheet in the form of a nest.
Brush the nests with egg yolk and place in a preheated 200°C (390°F) oven. Bake potato nests for 20 minutes. Put the stewed vegetables into the prepared nests, sprinkle with finely chopped parsley and serve.
