Yahnia eggplant casserole - one of the national dishes of Bulgarian cuisine, fried vegetables, baked in the oven with the addition of grated cheese. To prepare yahnia, you can take any hard cheese or cheese.

For the yahnia eggplant casserole recipe, lightly fry the flour in butter, and, stirring constantly, dilute with water to the consistency of thick sour cream. In a separate pan, fry the diced eggplant, add finely chopped onion. When the onion is lightly fried, add the chopped tomatoes and mix.

As soon as the tomatoes start juice, add the pre-fried and diluted flour, as well as the garlic, mashed with vinegar. Stir again and heat for another 2-3 minutes. Put the prepared vegetables on a baking sheet, sprinkle with chopped herbs, grated cheese and put in the oven. Bake yahnia eggplant casserole at 180°C (355°F) for 20 minutes.
