Duchess potatoes is a recipe for airy mashed potatoes with yolks and cheese, baked in the oven. This recipe is very similar to Marquis potatoes.

For the Duchess potato recipe, boil the peeled potatoes in salted water. When the potatoes are cooked, drain the water, and while the potatoes are still hot, rub through a sieve. In a separate bowl, mix the yolks, cream and salt. Combine the mixture with mashed potatoes, add grated cheese and mix well.
Transfer the potato mass to a pastry bag with a carved nozzle and deposit on a greased baking sheet. Bake potatoes at 210-220°C (410-430°F) for 20 minutes. When serving Duchess potato sprinkle with ground paprika.
