To cook a recipe of Ukrainian cuisine fried breaded eggplant, wash the eggplant, peel and cut into circles about 5 mm thick.
Season the sliced eggplant with salt, pepper, dip in flour, then in the egg and roll in breadcrumbs.
After fry the eggplant on both sides in vegetable oil. Transfer the fried breaded eggplant to a paper towel to remove excess oil, and then serve. When serving, eggplants can be poured with melted butter.
