Potatoes with Mojo Picon sauce is a Spanish recipe. This dish is very easy to prepare. If the potatoes are not washed after cooking, they will become covered with a white coating and thus stored at room temperature for up to 2 weeks.

For the potatoes with Mojo Picon sauce recipe, wash the potatoes well with a brush. Put the washed potatoes in a saucepan and cover with cold water, slightly covering the potatoes. Add salt and cook over medium heat until tender. After the potatoes are cooked, drain the water and let the potatoes cool.
While the potatoes are cooking prepare the sauce. Peel the pepper from seeds and membranes and finely chop. Place the chopped pepper in a mortar and grind with garlic, cumin and paprika. Then pour in the oil and vinegar. Grind all the ingredients well until a liquid sauce is formed.
Ready potatoes transfer to a plate, pour the sauce separately into a gravy boat and serve. This dish can be served warm or cold.
