Vegetarian meatballs is a Chinese recipe based on carrots, which is very healthy. The recipe uses starched noodles and is made from potato flour or sweet potato flour. Vegetarian meatballs do not have to be stewed, they can be served fried with sauce, and meatballs can also be cooked in advance, and warmed up, poured with sauce and stewed before serving.

For the vegetarian meatballs recipe, peel and finely grate the carrots, season with salt and toss to combine. Juice will stand out from the carrots, it is not necessary to pour it out.

Boil starch noodles and chop finely. In a bowl with carrots put the prepared noodles and two types of flour, finely chopped cilantro and water. Mix everything well - the dough should not be thick, it should resemble sour cream in consistency.

Such meatballs do not roll, they are squeezed out. Squeezing the meatballs is simple, with a wet hand scoop a small amount of dough, clench your fist, the dough should come out in the form of a ball between your thumb and forefinger, carefully remove the meatball with a spoon.

Pour 5 cm of vegetable oil into a deep frying pan or brazier and put on fire. When the oil is hot, add the meatballs and, stirring gently, fry them on all sides until golden brown. But do not rush to take out the meatballs, because the carrot dough itself is orange in color, the inside of the meatballs may be raw.

The finished meatballs should be firm enough to be easily picked up with chopsticks, but if the meatballs are soft, they are not ready yet. Transfer the fried meatballs to a paper towel and allow excess fat to drain.

Pour 1 liter of water, a pinch of salt, starch into a saucepan and put on fire. When the water boils, put the meatballs into it, mix and cook for 1-2 minutes. At the bottom of a deep plate, put finely chopped green onions, ground white pepper, soy sauce, sesame oil. Put stewed vegetarian meatballs into a plate with spices along with water and serve.
