Cut off the peel from the eggplant and cut into slices, not thin, about 1.5 cm. Pour olive oil into the pan, not all at once, adding a little while frying. Place the eggplants in a frying pan and fry on both sides until golden brown. Transfer the fried eggplants to a plate with a paper towel and season with salt and pepper.
