Rooster with vegetables – Indian cuisine recipe, juicy poultry in a fragrant thick sauce. Not everyone can get their hands on fresh curry leaves, but they can be replaced with dry ones or a couple of bay leaves. Of course, the taste and aroma will be slightly different, but this replacement option is quite possible.

Recipe Ingredients

Rooster 1 pcs
Onion 3 pcs
Tomatoes 3 pcs
Bell Pepper 3 pcs
Garlic 2 heads
Curry Leaves 2 tbsp
Turmeric 2 tsp
Coriander 1 tsp
Curry 3 tsp
Cumin 0.5 tsp
Ginger 4 cm
Vegetable Oil 3 tbsp

Cooking Recipe

To cook rooster with vegetables, rinse the poultry well, remove the remaining feathers and chop into small pieces.

Heat vegetable oil in a deep frying pan, add cumin and coriander seeds. Heat the grains until they crack.

Then add the onion cut into half rings to the pan, mix and fry until soft and transparent.

Add bell peppers and curry leaves, chopped into large slices, to the transparent onions.

Stir and literally a minute later add garlic and ginger, grated in a mortar. Can be chopped with a blender.

Cut the tomatoes into large wedges and place in the pan along with the ginger and garlic.

In the meantime, the rooster should already be prepared, namely, chopped into small pieces.

Put the prepared rooster in a frying pan with vegetables, stir and lightly fry.

Then add ground hot peppers, ground curry and turmeric to the pan. Mix everything, pour in water so that it slightly covers the food, cover and simmer over medium heat.

The braising time depends on rooster, sometimes it can take 1.5 hours, and sometimes 2 hours. Almost all the liquid should evaporate, you should get a good, not watery sauce. At the end of cooking, sprinkle with chopped cilantro and serve.
