Noodles with eggplant and spices - a recipe for a very simple dish of homemade noodles, vegetables and spices. You can buy noodles or other pasta at the store, but it's not that hard to make. You can use any spices you like. You can use a mixture of dry herbs, or you can use fresh herbs.

Cooking Recipe

The recipe for noodles with eggplant and spices is very simple. Roast the eggplant and peppers in a preheated oven at 250°C (480°F). Eggplant pre-pierced with a fork. Remove the peel from the roasted vegetables and cut into strips.

Knead the dough from flour and eggs and set aside for 30 minutes. Then roll out thinly and cut into strips of arbitrary width. If you have a pasta machine, this is very easy and quick, but even without it, cooking noodles will not take much time.

Pour spices and chopped garlic into the heated vegetable oil. After a minute, put the chopped vegetables and mix.

Salt and pepper the vegetables. Simmer vegetables over medium heat, stirring occasionally for just a few minutes.

Add the noodles to the vegetables, mix, pour in 50 ml of water and cover with a lid. Simmer noodles with vegetables over medium heat, covered, until the noodles are cooked through. When serving, decorate with herbs.
