Rooster with rice - a recipe for Bulgarian cuisine, such a dish is cooked for the holiday "Rooster Day" - the day of the rooster. Since the rooster is first boiled, and then baked in the oven, also with a fragrant spicy sauce, it turns out to be very tasty. Its meat is very well behind the bones. Rice boiled in chicken broth is a wonderful addition to rooster. The rooster must be taken with giblets.

For the rooster with rice recipe, rinse the rooster carcass, remove the insides and take it apart. Place the disassembled rooster in a deep saucepan and pour water over it, cover with a lid and bring to a boil. When the water boils, remove the foam, reduce the heat and cook for 1 hour.
Transfer the rooster to a roasting dish, brush with the hot sauce, pour in 2 scoops of the broth it was boiled in, cover with foil and place in a preheated 180°C (355°F) oven for 1 hour. After an hour, remove the foil and cook the rooster for another 15-20 minutes.
Finely chop the onion and fry in vegetable oil. When the onion becomes soft, add offal to it and mix.
Sort the rice, rinse and add to the pan with onions and offal, pour in the broth so that it covers the rice well, and simmer over medium heat until the rice is ready.
Put rice, pieces of rooster on the prepared dish, pour over the juice in which the rooster was cooked in the oven, and serve .
