In Armenian cuisine, meat for kebab is marinated without the addition of vinegar or lemon - only greens, pepper and salt are used. Shish kebab in Armenia is prepared from almost any meat, lamb, pork, goat, fish.

For the goat shish kebab recipe, make sure the meat is not pre-frozen. Wash the meat and cut into small pieces. Chop onion and mix with meat. Add salt, pepper, basil and knead everything well so that the meat releases juice. Cover the meat with a lid and refrigerate for 2-4 hours.
If marinated a day before cooking, the meat will only be juicier from this. Thread the marinated meat on a skewer and fry over hot coals until tender. Serve kebab, sprinkled with chopped onions and herbs on pita bread.
