Roast pork with mustard crust is an American cuisine recipe as an alternative to Thanksgiving turkey. Grilled pork is topped with a sauce of mustard, olive oil and thyme. The result is a very tender pork with a fragrant and very tasty crust. To prevent the meat from blurring, it is best to tie it with twine before frying, and before applying the mustard sauce, the twine must be removed.

Cooking Recipe

To cook a recipe of American cuisine roast pork with mustard crust, whisk mustard with olive oil and dry thyme.

Wash the pork and, so that later the meat does not lose its shape during processing, tie it with twine. Salt and pepper the prepared piece of meat on all sides.

Heat a skillet over high heat and add the pork. Fry pork on all sides until golden brown. The ends of the meat also need to be fried, otherwise all the juices from the meat will come out.

Remove the thread from the fried meat and use a brush to apply the mustard mixture in an even layer. Put the prepared piece of meat on a baking sheet or in the same pan in which the meat was fried, and place in an oven preheated to 200°C (390°F). The meat must be baked for 20 minutes.

During this time, you need to cook the pork sauce. Melt the butter in a saucepan, add finely chopped or grated garlic and fry it lightly for 30 seconds. Add flour to the garlic and steam it in oil, mixing everything thoroughly with a spatula. Next, add the wine, cream and chicken broth in turn. Mix everything well with a whisk so that lumps do not form and the sauce does not exfoliate. Cook sauce until thick. Remove the sauce from the heat, season with salt and pepper and, continuing to stir, let it cool.

Remove the finished roasted pork from the oven and let it rest for 5-7 minutes, and after cut into portions and serve with sauce. Thanks to the mustard coat, the pork is very tender, juicy and fragrant.
