Knuckle with BBQ sauce is a great recipe for Friday or just relaxing with friends. Very easy to prepare, minimum participation, as they say: cook, spread, bake. Even if the knuckle was not eaten immediately, it is not scary. It can be stored in the refrigerator and then served warm or even cold. If you don't have smoked coriander, you can use smoked paprika.

The recipe for shank with barbecue sauce is very simple. First, you need to boil the shank, so it will bake better and the crust will be crispy and at the same time soft. Pour water into the pan, add bay leaves, peppercorns, dill seeds and onions. The onion can be left unpeeled, washed and added to other products. When the water boils, place the knuckle in the pan, cover with a lid and cook over medium heat for 1.5-2 hours.
Grind the spices for spreading in a mortar with salt. Remove the shank from the water, let it cool slightly, and then make cuts on the skin with a knife. Spread the shank with the prepared spices, rubbing the mixture into both the skin and the meat. Place the shank on a baking sheet and place in an oven preheated to 180-200°C (355-390°F). Bake the shank for 1-1.5 hours.
When the knuckle is completely baked, remove it from the oven and brush it with barbecue sauce while it is hot. You can use any sauce; Teriyaki sauce is also good. Cut the finished knuckle into portions and serve with herbs and vegetables.
