Chicken satsivi is a national dish of Georgian cuisine. Satsivi is often served with gomi - corn porridge.

Recipe Ingredients

Chicken 2 kg
Walnut 500 g
Garlic 5 cloves
Onion 1 kg
Coriander 1 tbsp
Clove 3 pcs
Ground Cinnamon 0.5 tsp
Black Pepper 1 tbsp

Cooking Recipe

For the chicken satsivi recipe, fill the gutted and washed bird with water 3-4 cm higher and put on a strong fire. When the water boils, reduce the heat, remove the foam and cook until fully cooked for 1.5 hours. Remove the cooked chicken from the broth and let cool, meanwhile put the broth in the cold until the crust of fat hardens.

Brush cooled chicken with butter and place in preheated 200°C (390°F) oven for 30 minutes. Grind garlic, coriander, cloves, cinnamon, pepper, cilantro and salt in a mortar. Grind the nuts into small crumbs and combine with grated spices. Dilute the nut mixture with broth to the consistency of porridge.

Collect fat from the broth and fry finely chopped onion on it. Add the nut mixture to the boiling strained broth, stirring, bring to a boil and cook for 2-3 minutes. Then add onions and shredded chicken. Bring to a boil again, pour in the vinegar, add the bay leaf and cook over medium heat for 5 minutes. Cover with a lid and let steep for 10 minutes. Serve satsivi hot.
