Cilantro fried pork slices is a Chinese recipe, a Shandong dish dating back several centuries. The recipe contains a completely standard set of products, but the dish cannot be called monotonous.

Recipe Ingredients

Pork Meat 250-300 g
Cilantro 1 bunch
Shallot 1 pcs
Ginger 3 cm
Garlic 3 cloves
Rice Wine 2 tsp
Potato Starch 3 tbsp
Rice Vinegar 2 tsp

Cooking Recipe

To cook recipe of Chinese cuisine fried pork slices with cilantro, the meat must be cut into thin slices. In order for the meat to be cut better, it must first be slightly frozen, it will keep its shape and it will be easy to work with. Transfer the chopped pork to a bowl, pour in water and rinse the meat, then drain the water, squeeze the meat lightly - this will remove the blood. Then pour 1 tsp. starch, 1 tsp rice wine and stir. Dilute the remaining starch in a small amount of water. Add a pinch of salt to the meat, mix and pour in the diluted starch. Mix well again, you can use your hands, so all the ingredients are better distributed over the pork slices. Pour in sesame or vegetable oil, mix, cover the meat with a film and refrigerate for 30 minutes.

Remove the leaves from the cilantro stems, and cut the stems themselves about 3-4 cm long. Cut the garlic and ginger into thin slices, it is better to take a leek or shallot, cut into thin half rings. In a bowl with chopped food, add a pinch of salt, the remaining rice wine, vinegar, ground pepper, 1 tbsp. cold water and stir.

Pour a small amount of vegetable or sesame oil into the pan. Add pork slices to the heated oil and, stirring occasionally, simmer the meat over medium heat until the meat turns white.

Pour the prepared chopped products, mix and cook over medium heat for 2-3 minutes. The pork slices should not be fried, the green color of the cilantro stalks should remain green. Ready fried pork slices with cilantro, transfer to a prepared dish and serve.
