For the deep-fried chicken cutlets recipe, heat the butter in a deep frying pan. Add flour to the butter and fry for 2 minutes, and, without ceasing to stir, add a little milk. Without ceasing to interfere, add the grated cheese, egg yolks, salt, pepper and, stirring, cook for another 5 minutes.
