Cucumbers marinated in soy sauce is a Chinese cuisine recipe, a very interesting recipe for cooking cucumbers. The cucumbers turn out, although wrinkled in appearance, but they taste crispy with a light aftertaste of soy sauce and hot pepper. Not very beautiful looking cucumbers and even slightly wilted ones are well suited to this recipe.

Cucumbers 1 kg
Soy Sauce 375 ml
Vinegar 9% 250 ml
Water 250 ml
Sugar 250 g
Star Anise 1 pcs
Hot Pepper 3 pcs
Sichuan Pepper 0,5 tsp
Garlic 3 cloves
Ginger 1 cm
Salt 1 tbsp

Cooking Recipe

The recipe for cucumbers marinated in soy sauce is very simple. Wash the cucumbers, boil water in a saucepan, put the cucumbers in it and cook for 30 seconds. Drain the water, and put the cucumbers in a deep bowl, salt and put under pressure for 5-6 hours.

Pour soy sauce, vinegar, water into a saucepan, add sugar, star anise, Sichuan pepper and stir. Cook the marinade over medium heat until the sugar dissolves. Remove the marinade from the heat and cool under the lid.

The cucumbers should release a lot of liquid in 5-6 hours, if this time is not enough, they can be left under pressure overnight. After the time has passed, drain the liquid from the cucumbers, and place the cucumbers on a paper towel and dry.

Place the dried cucumbers in the prepared sterilized jars. Peel and chop the ginger and garlic. If the pepper is too big, cut it in half.

Add garlic, ginger and hot pepper to the jars with cucumbers, then pour in the soy sauce prepared in advance. Cover the cucumbers with lids and refrigerate. You can serve these cucumbers in 2-3 days.
