Coconut carrot rice is a recipe for Indian cuisine, fragrant, airy and delicious rice with the addition of various spices. Rice for cooking must be taken basmati or long-grain.

The recipe for coconut carrot rice is very simple. Rinse rice, cover with water and set aside to swell. Heat oil in a frying pan, add sesame seeds, cloves, black pepper, coconut and cinnamon stick. Mix everything well and fry over medium heat until the coconut turns golden.
Put the rice on a sieve and let the water drain, and then put it in a frying pan with spices. Fry for a few minutes, until the rice is slightly transparent, pour in water, then add salt, raisins, chopped carrots, mix and bring to a boil over high heat.
After boiling, reduce the fire, cover the pan with a lid and cook for 20-25 minutes, the rice should become airy. When rice is fully cooked and carrots are soft, remove from heat and let stand covered for another 5 minutes, then loosen and serve.
