Eggplant in an omelette - one of the recipes of Greek cuisine, eggplants are dipped in an egg mixture and fried on both sides in vegetable oil.

Eggplants 2 pcs
Milk 100 ml
Eggs 3 pcs
Wheat Flour 2 tbsp
Vegetable Oil 100 ml

The recipe for eggplant in an omelette is very simple. Wash the eggplant, cut into thin circles, salt, mix and set aside for 30 minutes so that the bitterness subsides.

In a separate bowl, grind the eggs with salt, add flour and beat well so that no lumps remain. Then dilute the egg mixture with milk.

Eggplants, after settling, must be washed, slightly squeezed, dipped in the prepared mixture and fried on both sides in hot oil.

Fry eggplant until crispy. When serving eggplant in an omelette decorate with herbs and a slice of lemon.
