Eggplant chips - a recipe for raw foodists, thinly sliced eggplants are marinated in a specially prepared marinade, and then dried. You can dry eggplant in the fresh air, but not in the sun, you can indoors, but well ventilated. Chips can also be made in a dryer, but at a temperature not exceeding 40°C (105°F).

Eggplants 1 pcs
Maple Syrup 1 tbsp
Olive Oil 2 tbsp
Soy Sauce 2 tbsp
Caraway 1 tsp
Salt 1 tbsp

Cooking Recipe

The eggplant chips recipe is quite easy to make, but not quick, as the drying process will take some time. In a separate bowl, mix all the spices, add vinegar, oil, syrup and soy sauce.

Wash the eggplants, it is not necessary to remove the peel. Cut the eggplant into thin slices. This can be done on a mandolin or with a sharp knife. If the eggplants are small, they can be cut with a vegetable peeler.

Transfer the eggplants to the marinade and leave for at least 2 hours, preferably overnight. The better the eggplants are marinated and saturated with all the aromas and flavors, the tastier they will be.

Transfer the pickled eggplant to baking paper and place in the dryer. Set dryer temperature to 40°C (105°F). After an hour, turn eggplant chips, and after another hour, remove the paper and dry for another hour or until the state you need turning the chips occasionally.
