Beef liver roll is a recipe for Ukrainian liver pate rolled into a roll with butter. Do not spare the oil, otherwise the pate will turn out dry and crumble.

Recipe Ingredients

Beef Liver 1 kg
Butter 300 g
Onion 1-2 pcs
Vegetable Oil 3 tbsp
Chicken Eggs 3 pcs
Parsley 100 g
Cognac 2 tbsp
Mustard 2 tsp
Bay Leaf 2 pcs
Allspice 4 pcs

Cooking Recipe

The beef liver roll recipe is very simple. Wash the liver, remove the film, cut into small cubes and fry in vegetable oil with chopped onion. It is necessary to fry the liver until a crust forms.

Add bay leaf, allspice, salt to the liver, cover and simmer for another 5 minutes over low heat.

After mince the liver and boiled eggs 2-3 times in a meat grinder. Whip the minced liver with the addition of 100 g of butter, put it on the prepared foil and roll it into a thin layer.

In a separate bowl, beat the remaining 200 g of butter with the addition of mustard and chopped herbs. Put the whipped butter in an even layer on the liver layer and twist everything into a roll.

Wrap beef liver roll in foil, refrigerate for 1-2 hours, then cut into portions and serve with herbs and pickled mushrooms or cucumbers.
