To cook a dish like katlama, knead a tough dough with flour, water, oil and salt. Set the dough aside for 15-20 minutes.
After that, divide the dough into two parts and roll out into a thin layer. Lubricate the layer with vegetable oil, roll it up, and then twist it with a snail. Let the dough stand again.
After 5-10 minutes, roll out the dough into a layer as thin as possible. Finely chop the onion and mix with chopped herbs and salt. Put the filling on a rolled layer of dough, roll into a roll.
Cut the prepared roll into cubes, approximately 5 cm each, and flatten them along the cut, giving the shape of a flapjack.
Fry katlama in vegetable oil under a lid over medium heat.
