Stewed zucchini is a wonderful breakfast dish. If you like more hearty breakfasts, zucchini can be sprinkled with grated cheese, chopped greens and baked in the oven until the cheese is completely melted.

To cook stewed zucchini cut the washed and peeled zucchini into circles. Finely chop the onion and fry in oil with chopped garlic for no more than 5 minutes.

Remove the skin from the tomatoes and cut into large pieces. Add the prepared tomatoes to the onion and garlic, pepper and salt.

Arrange zucchini on top and top with beaten eggs. Mix everything and simmer over medium heat for 15-20 minutes under the lid.

Sprinkle the zucchini with grated Parmesan and after 1-2 minutes you can serve. When serving stewed zucchini, sprinkle with chopped herbs. Zucchini can be served warm or cold.
