Recently, salted caramel has conquered the whole world, many thanks to the inventor. Salted caramel is not only added to ice cream, it can also be poured over regular classic ice cream. Recipe Ingredients

For the salted caramel
Sugar 180 g
Cream 33% 180 ml
Butter 30 g
Salt 2 g
For ice cream
Milk 540 ml
Egg Yolk 60 g

Cooking Recipe

The recipe for salted caramel ice cream is very simple. Pour sugar into a heavy-bottomed saucepan or non-stick frying pan and place over medium heat. Wait until the sugar has completely dissolved, darkened and started to bubble, and then add the butter. Mix gently but quickly with a silicone spatula.

At the same time, heat the cream, but not to a boil. Remove the sugar and butter from the heat and carefully pour in the cream, continue stirring with a spatula. When the mass becomes smooth, add salt and stir until it is completely dissolved.

Whisk the milk with the yolks and place over medium heat, stirring with a whisk. Pour the salted caramel into the hot milk and stir with a whisk until the mixture reaches 85°C (185°F).

Cool the prepared mass, beating with a mixer until fluffy, and then put it in the refrigerator for 2-3 hours to cool thoroughly. You can speed up the process and put it in the freezer for 40 minutes. Prepare ice cream with caramel in the ice cream maker for 40 minutes.
