Lemon pie is an American cuisine recipe. When preparing a pie crust, ordinary cookies are used, but not biscuits and not crackers. You can reduce the amount of lemons or use store-bought lemon juice, which is less acidic.

Cooking Recipe

For the lemon pie recipe, peel the lemons with a fine grater. Crush the cookies into small crumbs and mix with sugar, zest and butter. Line a baking dish with parchment paper and lay out an even, thin layer of cookie dough. Put the form with the dough in the oven and bake at 180 degrees for 10 minutes.

For the filling, separate the yolks from the whites, then beat the yolks with powdered sugar into a lush, thick foam, and beat the whites with a pinch of salt until medium peaks. Whip cream in a separate bowl. Gently mix the yolks, whites, cream and juice from the lemons. If you use ready-made store-bought lemon juice, then it will need approximately 300 ml.

Pour the prepared filling into a slightly baked cake and place in the oven. Bake lemon pie at 150°C (300°F) for 1 hour 30 minutes. If baked at 140°C (300°F), 1 hour 50 minutes. After baking, let the cake cool completely, but in no case put it in the refrigerator, it should cool at room temperature. Cut the cooled lemon pie and serve with a scoop of ice cream and hot tea.
