Kheera raita – a national dish of Indian cuisine, which is a cold soup of grated cucumbers in mint yogurt.
Heat oil in a frying pan, add mustard seeds and fry until the seeds begin to crack. Pour the oil and seeds into the yogurt-cucumber mixture, mix well and put in the cold for 2 hours. After kheera raita has cooled, pour into bowls and garnish with carved cucumbers and paprika or paprika.
