Kheera raita – a national dish of Indian cuisine, which is a cold soup of grated cucumbers in mint yogurt.

Recipe Ingredients

Cucumbers 450 g
Yogurt 350-370 ml
Mint 1 twig
Lemon Zest 1 tsp
Vegetable Oil 2 tbsp

Cooking Recipe

To cook kheera raita, was the cucumbers, grate them, peel them before that, put them in a bowl, salt and let stand for 20-30 minutes.

Beat the yogurt lightly, add pepper or paprika, chopped mint, lemon zest and mix well.

Drain the cucumbers, squeeze and add to the yogurt.

Heat oil in a frying pan, add mustard seeds and fry until the seeds begin to crack. Pour the oil and seeds into the yogurt-cucumber mixture, mix well and put in the cold for 2 hours. After kheera raita has cooled, pour into bowls and garnish with carved cucumbers and paprika or paprika.
