Tarator – a national dish of Bulgarian cuisine, tarator is prepared in summer in hot weather and served cold.

For tarator cut cucumbers into small slices or cubes, grind nuts and garlic with salt.
Lightly beat the sour milk with a whisk, add cucumbers, nuts and garlic, pour in the oil and mix well.
After diluting tarator with cold water to the desired density, pour over with olive oil, sprinkle with herbs and serve.
