Cooking Recipe

For the Kappa Maki roll recipe, you need to cook the rice first. Rinse the rice several times until the water runs clear. Transfer the rice to a sieve and set aside for 1 hour. Then put the rice in a saucepan, pour in water, add kombu and put on medium heat, covered with a lid. When the water boils, remove the algae, reduce the fire to a minimum and cook for another 10-12 minutes until all the liquid has evaporated. In a separate bowl, mix vinegar, sugar and salt. When the rice has cooled slightly, mix it with the vinegar mixture.

Put a sheet of nori on the mat, put a layer of rice about 1-1.5 cm thick on top of the nori. Spread the rice away from yourself, not reaching the end of the nori about 1 cm. Wash the cucumbers, peel and cut into strips. Put the cucumber strips in the center of the rice and use a mat to twist the roll away from you. Lightly wet the edge of the nori, which was left without rice, with water and roll up the roll. Wrapped with a Kappa Maki roll mat, press down a little, giving it a round or square shape. After unfolding the mat, cut the roll into 8 equal parts. Kappa maki rolls are served with wasabi, pickled ginger and soy sauce.
