For the grilled sardines recipe, wash the sardine, remove the head, gut, cut the belly to the very tail. Lay the sardine on the board with the belly down and lightly press on the spine with the palm of your hand so that the carcass flattens out. Thus, the ridge will easily separate along with the bones.
In a mortar, crush the fennel seeds with ginger, cumin, salt, pepper, lemon zest and parsley. Pour into the spices 3-4 tbsp. olive oil and mix well.
Grease the prepared fish with a mixture of spices and oil and put on a heated grill skin side down.
Grill fish for 2 minutes, turn to fry for another 1 minute, and then squeeze lemon juice into the pan. After another 1 minute, the fish will be ready. Fish can be served with bread, lemon and fresh salad, or simply chopped fresh vegetables.
