Stuffed eggs with anchovies - a recipe from Spanish cuisine, an easy-to-prepare appetizer that is very well complemented by anchovies in oil. You can add various spices that you like best to the yolk mixture. It is better to use Emmental or Parmesan cheese.

The recipe for stuffed eggs with anchovies is very simple. Boil the eggs, cut lengthwise and remove the yolks. Grind the yolks with mayonnaise, paprika, finely chopped parsley, Philadelphia cheese and salt.

Fill the egg halves with the resulting mixture. Grate the hard cheese on a fine grater and mix with breadcrumbs.

Sprinkle the breadcrumb mixture over the eggs, add the anchovy halves and bake in an oven preheated to 200°C (390°F) for 15 minutes. Serve stuffed eggs warm or cold.
