For the tapaka chicken recipe, cut the gutted chicken carcass along the breast bone and flatten it. Mix salt, pepper and minced garlic. Grate the chicken with the prepared mixture and put in the cold for pickling.

The chicken is marinated from 1 to 6 hours, it all depends on the size of the carcass. Fry the marinated chicken on both sides under pressure in butter. Fry chicken tapaka over moderate heat for 30 minutes on each side.
