Chicken Chilindron Pollo al Chilindron - a Spanish recipe, chicken in wine with smoked ham is very tasty. Serve the same wine in which the chicken was cooked in.

For the chicken Chilindron recipe, small chicken carcasses weighing about 600 g are used. Cut the plucked and gutted chickens into large pieces. Heat the olive oil in a deep frying pan and fry the chicken in it until golden brown.
Transfer the fried chicken to a plate, and add chopped garlic and finely chopped onion to the same pan. Finely chop the chili pepper, sweet green pepper and add to the lightly fried onion and garlic. Scald the tomatoes with boiling water, peel, finely chop and add to the rest of the vegetables, mix and simmer over medium heat for 10 minutes.
When the vegetables are stewed, transfer the fried pieces of chicken to them, cover and simmer for 5 minutes. After adding the chopped ham, pour in the wine and continue cooking for another 5 minutes. After the time has elapsed, put chickens on the prepared dish and pour over the resulting sauce.
