Swedish pancakes resemble thin, fluffy omelets. Any berries you like for the sauce will go with this Swedish dish.

For Swedish pancakes, you need to beat the eggs and yolks with half the milk. Add flour, salt and mix well. Melt the butter and mix with the remaining milk and cream. Combine everything, mix until smooth and set aside in heat for 1 hour.
After the dough has settled, in small portions, about 2-3 tablespoons, fry on both sides in vegetable oil. Serve pancakes with chilled sauce.
To cook the sauce, sugar must be dissolved in warm water and brought to a boil. Pour berries into the syrup, and after 3-5 minutes add starch, previously diluted in a small amount of water. Mix everything, let the sauce boil and cool.
When serving, pour ready-made pancakes with berry sauce. Pancakes can be served both cold and warm.
