Ezme is a national Turkish vegetable appetizer made from tomatoes, sweet peppers, cucumbers and spicy tomato paste with dried mint.

For the ezme recipe, peel the cucumbers and finely chop them.

Make criss-cross cuts on the tomatoes, scald with boiling water, remove the skin and chop finely.

Finely chop pepper without seeds and partitions and mix with tomatoes and cucumber.

Add all other ingredients to the appetizer, mix well and serve. Ezme is served with meat, chicken, potatoes, fried toast and as an independent dish.
