Grilled eggplant and tomato salad – a recipe for Turkish cuisine, such a salad is served with the main course of rice, that is, pilaf.

For the Turkish cuisine recipe grilled tomato and eggplant salad wash the eggplant, cut into circles and fry on a grill greased with olive oil.
In a separate bowl, mix the remaining olive oil with the vinegar, salt, pepper, cumin, coriander and finely chopped garlic. Pour the fried eggplants with the prepared sauce, mix and refrigerate for 2 hours.
After the time has passed, mix the eggplants with chopped slices of tomatoes and cucumber. Put salad on a dish, pour over yogurt and serve. For a fresher taste and aroma, the salad can be sprinkled with finely chopped parsley or cilantro.
