Potato and tomato bake is an Italian recipe, a very simple and tasty dish from the southern regions of Italy.

For the recipe potatoes baked with tomatoes, peel the onion and cut into slices. Peeled potatoes and tomatoes also cut into slices. Grease a flat baking dish with oil, lay out a layer of onion, top, alternating, lay out tomatoes and potatoes, drizzle with oil, pour in water, salt, pepper and sprinkle with cheese.
Put a layer of onions on top, a layer of potatoes with tomatoes, salt, pepper, drizzle with oil and sprinkle with cheese. Place the basil leaves on top of the last layer and place in a preheated oven at 180°C (355°F).
Bake the casserole for 1 hour, or until the potatoes are soft and browned. If the potatoes are hard inside and start to burn on the outside, cover the pan with foil and continue to bake until cooked through. Serve potato and tomato bake warm, garnished with basil leaves.
