Chicken thighs in wheat tortillas – a recipe from Spanish cuisine, excellent rolls for the weekend. You don’t have to cook the tortillas yourself, you can buy them, if they are large, you can cut them. Chicken thighs can be replaced with chicken fillet, mayonnaise can be replaced with yogurt.

The recipe for chicken thighs in wheat tortillas is very simple. First, you need to prepare the tortillas. In a deep bowl, mix the sifted flour with salt. Heat the water to 40°C (105°F) and pour it into the flour. Knead a stiff dough.

Divide the dough into 16-17 pieces. Form balls from the dough pieces, cover with film and set aside for 20 minutes.

When the dough has rested, roll it into thin flat cakes, stretching the edges. Put the frying pan on the fire and when it is hot, fry the flat cakes on both sides, without adding oil.

While the tortillas are frying, you can prepare the remaining ingredients. Cut the tomatoes into rings or half rings. Peel the purple onion and cut into thin half rings. Wash and dry the lettuce leaves.

Remove skin and bone from chicken thighs, flatten, and beat if desired. Salt and pepper the prepared meat and roll in breadcrumbs. Heat a small amount of vegetable oil in a frying pan, add the prepared meat and fry on all sides.

Separately mix mayonnaise with finely chopped greens. Now you can assemble everything. Grease wheat tortillas with mayonnaise, put lettuce leaves, onions, tomatoes and chicken pieces. Roll the tortillas into a roll and you can serve.
