Tomatoes in the snow - a Spanish recipe, this appetizer can be served both warm and chilled.

For the tomatoes in the snow recipe, scald the tomatoes with boiling water, remove the skin and cut in half. From the halves of the tomatoes, remove a little pulp, sprinkle with salt, pepper and basil.
Whip the cream lightly and mix with half of the grated parmesan cheese. Pour the resulting mixture into the tomatoes, sprinkle with the remaining grated Parmesan and sprinkle with a little basil.
Preheat the oven to 200°C (390°F), place the tomatoes in the oven and roast for 8 minutes, unroasted. Serve tomatoes in the snow immediately or chilled, garnished with sprigs of fresh basil or parsley.
